Fondue
Werner Schädler reveals his recipe for a very special cheese fondue - A fondue with fire.
Ingredients for five people
- 330g alpine cheese
- 330g Appenzeller cheese
- 330g Gruyère cheese
- 20g cornflour
- 5dl sour must (fermented apple wine)
- Some fruit brandy
- green pepper
- Piri Piri
- Tabasco
- chili powder
- sambal olek

Note
Depending on taste, the three cheeses can vary from tangy to mild.
Preparation
Put the three cheeses together with the sour must into the fondue caquelon and melt. Stir constantly during the melting process. To thicken the cheese mass, now add the cornflour. Add to the melted cheese a pinch of green pepper, the chili powder, a little piri piri, some Tabasco and a pinch of sambal olek. If you like it spicier, you can be more generous with the spice ingredients. Once the cheese is completely melted and the ingredients are mixed in, you can stir in some fruit brandy if needed. Now the fondue is ready and you can serve it.
