Dreikönigskuchen

Who do you think will be king or queen on January 6? An Epiphany cake is a traditional part of January 6 in Liechtenstein. Anyone who feels like baking one themselves can pick up a free crown for the cake at the Liechtenstein Center.

Ingredients

  • 60g butter
  • 500g flour
  • 1 tsp salt
  • 100gsugar
  • 20gfresh yeast (or a bag of dry yeast)
  • 2.25dl milk
  • 1 egg
  • 50 raisins 
  • 1 almond or king
  • 1 egg for coating
  • 1 tbsp almond flakes
  • 1 tbsp hail sugar


Preparation

1. melt butter. Mix flour, salt and sugar. Form a hollow in the center. Dissolve yeast in milk, add butter. Add egg and liquid to the well. Knead everything into a soft, smooth dough. 

2. knead raisins into the dough. Cover dough with a damp kitchen towel, let rise in a warm place for about 2 hours until doubled.

3. Form 280g dough into a ball on a little flour. Place in the center of a baking tray lined with baking paper. Divide remaining dough into 8 equal pieces and form into balls. Knead the almond into one ball. Arrange small balls a little apart around the large ball. Cover and let rise for another 30 minutes. 

4. preheat oven to 190 °C. Whisk egg, brush cake with it. Sprinkle with flaked almonds and hail sugar. Bake in the middle of the oven for 25-30 minutes. Remove from oven and let cool.
